  1. Lay out each slice of octopus
  2. Using your knife, gently tap the knife's edge along the length of the slice- using a chopping motion. Be careful not to apply too much pressure and accidentally cut through the slice. This is a delicate, fast paced step.
  3. Repeat these steps for each side of the  sashimi
